Which books have corrected printings? I know The Core book does (happy owner of a corrected printing)

Other than the core, I'm not aware of any corrected printings for any subsequent books.

There needs to be a sell through off the first printing and a strong enough call for additional copies fora second printing. If a second printing is called for then the known errata is incorporated into the master file before sending back to the printer.

I almost bought a 3rd printing of the Core to be my second copy of the book, but when I flipped through it and saw that Submersion is still 10x(Gradex3) Karma, I realized I don't actually need that second copy just yet.  One will do me until more of the errata is handled.

Good Lord, sometimes I really wonder, what's going on there. When fans are basically proofreading the books for free, it should be a managable task.

What about the PDFs are those going to get corrections so one can re-download the updated copy?

I believe that the core rulebook PDF has been updated to reflect the changes noted above. I don't that the other PDF have been updated to reflect any of the errata/corrections noted. Typically, that is done when they prep for a reprint.
