So, where would I find the rules on how to handle Stun Damage against non-living beings?

There are none.  You have to common-sense it for now.

Given that people can break things with their bare hands I guess the question is does that mean stun can break things or is that effectively a called shot for physical damage. Do those exist in 6e?  Not sure where common sense lines up on this.

Well, if you try to punch a car to death, it's up to the GM to apply common sense as to whether you CAN.  (of course, if are a troll with dermal deposits or anyone else with bone lacing, you're punching at Physical damage anyway).

So, Spell, Clout. Is a Physical Spell, that uses, basically, compressed air to deal stun damage. So, common sense wise, if pressurized air was of sufficient force, then yes, it would do damage to a device/barrier/drone.

Or, maybe it isn't.  Depending on whether the target is a big rig, or a frikkin' tank, or a bank vault door.  As for now, it's GM call.
