When did companies go to images on the back anyways?

Uhm...when haven't they?

Looking through all the GM screens I've got right now (Shadowrun and otherwise), they've all got crunchy bits on the inside for the GM, and artwork on the outside for the players. 

What game(s) do you have that have charts or something on both sides?

The old (West End Games old!) Star Wars GM Screens had charts on both sides.

Deadlands has it, 1 of the many D&D Screens had it,The Midgard Screen(the oldest German Fantasy RPG,appr. 30 Years old) ....
Quite  some Screens are printed with Lists & Charts on both sides

with a Dance on both sides
