Your assumption is all Detection spells operate on one of the existing 5 senses. This is not true. "The sense" that Mindprobe works on is "Mindprobe". It feeds the information into your brain in a way your brain can interpret it, like any other sense. There is a single target (chosen at time of casting) and the laws of magic would require a link to that target (LOS or touch).
