....so have an interesting idea for a character who is more of a covert ops saboteur than a demolitions expert.

In the description of the Demolitions skill it mentions that it not only allows one to place explosives for the greatest effect, but it can also be used to disarm them as well.  So based on that, it would make sense that the various technical skills could be used as a more discrete method of  sabotage rather than just blowing things up or smashing them to bits.  True, one would need the appropriate tool kit for the specific job automotive, aircraft, general electrical, HVAC etc.).

Also, would having the Juryrigger Quality be of help?  In Run & Gun [Blow Up Good] it mentions it is helpful for setting booby traps on the fly.

Not sure what you are saying here....

Demolitions is used for making, disarming and placing bombs....

Aircraft mechanics is used to repair and take apart aircraft...

This really (to me at least) is self obvious.... you want to sabotage a car, you the appropriate skill. (assuming you just don't shoot it full of holes till its damage monitor is full... which uses the a Gun skill :P)
Where am I going? And why am I in a hand basket ???

....looking for a more discrete means rather than shooting up or blowing things to bits.  Especially thinking of electrical grids, production facilities, prototypes etc.

As Reaver suggested, I'd use the appropriate skill as the basis for making checks to sabotage (ie cause it to fail/break/etc).

Agreed, taking something apart would utilize the same skill required to build it in the first place. There is potentially more room for skill substitution (for example, using the Hardware skill to sabotage a Car by knowing that unplugging the battery will cause the electric motor to not start; or using any Firearms skill to know that removing the firing pin will make a gun not shoot).

Did you have a question about something more specific than "do you use the same skill to undo?"

All the things you just listed I would place under Industrial Mechanics. It is a VERY useful skill for the saboteur... :)
Having a Knowledge skill in Engineering would be useful as well.

The problem with defending the purity of the English language is that English is about as pure as a cribhouse whore. We don't just borrow words; on occasion, English has pursued other languages down alleyways to beat them unconscious and rifle their pockets for new vocabulary. - James. D. Nicoll

I'd say Architecture. Having active skills in the Engineering skill group is having Engineering knowledge skills.

Architecture is a good one as well...
I disagree with your assessment of the Engineering KS, however. There is definitely overlap (and maybe a LOT of overlap), to be sure, but I would say that it covers things the individual skills might not.. :)

Like having Physics (Ballistics) is NOT the same thing you would know if you just had a Gun Skill.
I know MANY highly skilled gun enthusiasts who cannot explain ballistics adequately, and if you were to show them ballistics tables for various loads, or ask them to creat a ballistic table would have no idea on how to even approach it... :)

But YMMV, of course. :)

Speaking as an industrial instrumentation mechanic and an electrican:

Endineers are good for drawing pretty pictures and telling you what you should do....
Put a tool in their hand and tell them to actually DO it, and they just stare at you like a monkey doing a math problem :P

Indeed...
But if you are going to be a Sabateur, You should be able to read those pretty pictures, and potentially make one of those pretty pictures...
One of the reasons my Spy has Engineering (Schematics).   :)

But then, I am a HUGE proponent of skills over attributes, so. :)

I can't stand it I know you planned it
I'm gonna set it straight, this watergate
I can't stand rocking when I'm in here
Because your crystal ball ain't so crystal clear
So while you sit back and wonder why
I got this fucking thorn in my side
Oh my God, it's a mirage
I'm tellin' y'all it's sabotage

So listen up 'cause you can't say nothin'
You'll shut me down with a push of your button?
But yo I'm out and I'm gone
I'll tell you now I keep it on and on

'Cause what you see you might not get
And we can bet so don't you get souped yet
You're scheming on a thing that's a mirage
I'm trying to tell you now it's sabotage

Why; our backs are now against the wall
Listen all of y'all it's a sabotage
Listen all of y'all it's a sabotage
Listen all of y'all it's a sabotage
Listen all of y'all it's a sabotage

I can't stand it, I know you planned it
But I'm gonna set it straight this watergate
But I can't stand rockin' when I'm in this place
Because I feel disgrace because you're all in my face
But make no mistakes and switch up my channel
I'm buddy rich when I fly off the handle
What could it be, it's a mirage
You're scheming on a thing - that's sabotage
