I'm rereading the old Dragon Heart trilogy and in Clockwork Asylum they make it pretty clear that Damien Knight and David Gavilan are the same.  My question is is thus cannon? Or is just considered rumor like so much else?

The answer is yes to both.

Knight is Gavilan and there is no evidence of it so its only rumor.

Or maybe Fastjack is Gavilan.

Fastjack was not, by his own admission, part of the Echo Mirage team, which included some of the best people and hackers he'd ever known.  Galivan/Knight (obviously) was.  While there is not enough proof for Knight to be conclusively and publically proven to be Galivan - by which we mean 'provable in a court of law' - there is enough evidence for the shadows to consider this absolutely true, and for those with connections to the shadows to be 'certain to the point of not needing further evidence'.

No.  As far as I know, while it tends to be firm in the mindset of players (and maybe in-world, too) that a Mother or Queen has to be summoned into a female body, it doesn't actually matter.  That'd be like the spider wasp checking the gender of the spider it lays an egg in.

Definitely in-world too.

Also I don't remember seeing anything that Knight has become an insect host anywhere, just that he's authorized experiments done on them.

I wasn't addressing whether or not it mattered, rather I was making it clear what the in-setting view is as of Street Grimoire, seeing as you seemed unsure of this by your own "and maybe in-world, too" statement. It's more than just a player mindset, clearly.

This leads me to believe at least one person Knew who knight was.

As for insect spirits, didnt Ares get nailed for experimenting with paracritter/insect spirit hybrids "For Security Purposes" as far back as 3rd ed?

Blood in the Boardroom, page 57. It was previously hinted at in Portfolio of a Dragon: Dunkelzahn's Secrets, page 60. Right now, I can't think of any other book in which that information would have featured.
